Holy Guacamole, It's Cinco de Mayo!

As an avid Guacamole lover there aren't many reasons I need to dig in... in fact on a trip to Cabo, I ate Guacamole for Lunch and Happy Hour every day, for 7 days straight... and no, I didn't get sick of it.  Since it's Cinco de Mayo, grab yourself a Margarita, a group of friends.. and whip up this Guacamole recipe for all to enjoy... just make sure to save some for me.

Recipe:
Place the jalapeno in a mortar and mash to release the juices. Scoop the avocado flesh into the mortar. Add the lime juice and cilantro and crush until chunky. Add the tomato, mix well, and season to taste with salt and freshly ground pepper.
